ROTISSERIE IS OUR BUSINESS… …AND SOON YOURS

Léon Labroche school, is a recognised Ministry of Employment training- centre, and was founded in February 1996 in response to the various needs of newly set up roasters / hot food concepts or existing establishments.The purpose of the courses is to train users in the latest techniques of baking,conservation of food, and health and safety. Our courses are for beginners, those that already have some experience and cooking pro- fessionals who wish to open their concept under the best possible conditions.

Our training can take place : – in our rotisserie school – at customers premises – or, in order to fully benefit, partly in school and on customers premises.

A technical and follow up training over 3 months will allow you to start your business in the best possible conditions.

The training is implemented as follows : -

• Theory which will be held in our meeting room, where we will discuss with the trainees the various subjects to be tackled over the course.
• The practical part of the training should take place at the workplace, out of operational times, in order to apply the theory and to elaborate on the recipes.

During the training 7 support of lessons or modules gives you the possibility of having a complete training or just to improve on certain points : – the rotisserie, products filmed Kitchen, use of spits – special Sauces for rotisseries, temperatures charts, techni- cal data sheets – 70 recipes for rotisserie, sauces, desserts – cleaning of ovens and other equipment, rotisserie cleaning – to master hygiene – management module

These modules, updated according to the ever changing norms and regulations, are given to you during the course so that you can improve techniques seen during the day and thus train on your own site, after the course.
